We do not ship products. Instead, we will personally deliver to you, within the Greater Victoria area - Sidney, Victoria, Sooke and all points in-between, and will arrange a meet-up in Langford for people from Duncan.

All About Tahini

Tahini is a paste made from ground sesame seeds which has its origins in the Arabic countries of the Mediterranean. Although delicious by itself on bread or toast it is often blended with other ingredients to make sauces, dressings, dips and spreads or used as an ingredient in pies and casseroles etc. as well as in sweet dishes such as cheesecakes, cakes and puddings.
Tahini is a fairly concentrated nutritional food source. It is one of the best sources of vitamins E, F, and T as well as vitamins B1, B2, B3, B5, B6, B15, Biotin and Choline. It is also a fair source of vitamin A. Tahini also rich in amino acids and essential minerals and is 20% complete protein, being richer in protein than milk, soya beans, sunflower seeds and most nuts.
It is one of the richest sources of Methionine (an essential amino acid) and also contains natural lecithin, which reduces blood fat levels and provides protection from environmental pollutants such as nicotine. Tahini also supplies significant amounts of the minerals magnesium, potassium, iron and phosphorous and even larger amounts of the mineral calcium. In fact Tahini is reputed to be the best food source of calcium there is but unlike dairy products which are the traditional source of calcium in a Western diet it is not mucous forming. Our tahini is processed using very slow moving stone mills which minimizes the heating of the seeds and ensures maximum retention of nutrients. Conventional tahini made using high speed roller mills is heated to such a temperature that vital nutrients are destroyed in the process. Tahini manufactured in this way also tends to separate out leaving the ground seeds on the bottom of the container, very hard and dry, and a thick layer of oil floating on top. On the other hand there is only very minimal separation in tahini made using the stone milling method.
Despite its high oil content tahini has excellent keeping qualities and will not go rancid even if left unrefigerated after opening. This is because sesame contains the natural preservatives sesamin and sesamol which stabalise it over long periods. The tahini made with unhulled seeds is more vitamin and mineral rich than that made with the hulled seeds but it is also darker and stronger in flavour.

Dates: A Nutritional Powerhouse

*California dates are sodium-free, fat-free (including saturated fat-free), cholesterol-free and provide 14% of the RDA for dietary fibre.
*A serving of dates contains 31 grams of carbohydrates which are readily assimilated by the body making dates a perfect choice as an energy-boosting snack.
*Only 23 calories per serving (5-6 whole dates, or 1/4-cup pitted dates, equal one serving).
*One serving of California dates contains 240 mg of potassium, or 7% of the RDA for this essential nutrient. In fact, weight for weight, dates contain more potassium than bananas. Medicinal Uses
The fruit, because of its tannin content, is used medicinally as a detersive (detergent) and astringent in intestinal troubles. Can also be taken to relieve fever, cystisis, gonorrhea, edema, liver and abdominal troubles. Has also been used to counteract alcohol intoxication.
Date Varieties
"Semi-dry" dates have firmer flesh and a relatively lower moisture content than "soft" varieties. The Deglet Noor ("Date of Light"), a medium-large, oblong and amber-coloured date and the Zahidi ("Nobility"), a smaller, more egg-shaped and golden-coloured date, are the most popular semi-dry varieties.
Although the total sugars in the semi-dry dates are approximately equal to those in the softer dates, the sugars have not fully inverted. Rather, the semi-dry dates contain about 50% inverted sugars and 50% sucrose. Since they are firmer, semi-dry dates can be harvested mechanically, can be processed successfully and can be held in moisture-proof packaging with little deterioration.
DEGLET NOOR
Called the "Date of Light," a semi-dry date, possesses a delicate flavour and is long and firm-textured in appearance, with a colour range from light red to amber. Makes up 90% of California's crop.
MEDJOOL
The connoisseur's date: large, firm but moist, with a rich mahogany colour, Medjools are a must for gift tray arrangements.
BARHI
Named for the hot Arabic winds called "Barh," this is a late-ripening date with a medium-thin skin which can be easily split. Small and round, Barhis are soft, syrupy-tasting dates with tender, firm flesh. Since they are so very fragile and to minimize handling, Barhis can be purchased in a pre-packed 5-lb box as well as in full case lots of 12 lbs. Barhis must be kept refrigerated.
KHADRAWI
  A soft date with many desirable qualities. They ripen to amber, then are cured to a reddish brown, with a caramel-like texture and a sweet flavour.
HALAWI
  A soft date with thick flesh, caramelly and sweet, somewhat wrinkled in appearance, with a yellow colour ripening to a light amber and then to a golden brown.

All about Maca Powder

Maca Powder, certified organic, from Peru
Maca root has been used by native Indians in Peru as a vital ingredient to health for thousands of years. Maca's use goes back to around 3800 B.C., when Peruvian Indians cultivated and ate it for both its nutritional and medicinal value. Centuries later in 1549 A.D., records indicate that, during his time in Peru, the Spanish explorer Captain de Soto received Maca from the Indians as a gift in return for his help in improving methods of animal husbandry in the Peruvian Castille region. By 1572, as Maca's health-giving properties gained notoriety, the Chinchayochas Indians had begun using Maca root for barter. It was not until 1843 that this plant was studied by scientists and given the botanical name of Lepidium meyenii, Walpers. after German Botanist Gerhard Walpers.

Maca root grows in the mountains of Peru at high altitudes of 7,000 to 11,000 feet, making it the highest altitude growing plant in the world. Maca is a radish-like root vegetable that is related to the potato family, and is tuberous and spherical in form. The root itself is about three to six centimeters across and 4.7 centimeters in length. There are four recognized types of Maca Root based on the color of the root. Root color varies from creamy yellow or light pink to dark purple or black.

Chemically Maca root contains significant amounts of amino acids, carbohydrates, and minerals including calcium, phosphorous, zinc, magnesium, iron, as well as vitamins B1, B2, B12, C and E. Peruvian Maca also includes a number of glycosides.

As a nutritional supplement, Peruvian Maca has generalized tonic effects on the biochemical functioning of the human body. Chief among these effects is the enhancement of endocrine function. The endocrine system includes all of the glands, and the hormones they secrete, that exist in the body and that control such conditions as fertility, sexual function, digestion, brain and nervous system physiology, and energy levels. All about Goji Berries

Goji Berry (Lycium) is also commonly known as Wolfberry. Like many of the herbs and natural supplements that have been found in Asia, Goji Berry is known to have to many positive effects for people who want to promote total body health. Goji has been around for more than 6,000 years and can be cultivated in many temperate climates throughout the world.

Spirulina is a simple one-celled microscopic fresh-water blue-green algae with the scientific name Arthrospira platensis.

Spirulina’s ability to reduce the bad cholesterol LDL in the body helps prevent the onset of cardiovascular diseases, such as hardening of the arteries and strokes. It also helps lower blood pressure. While not clinically proven, spirulina may also protect against allergic reactions and liver infection.

Research confirms Spirulina promotes digestion and bowel function. It suppresses bad bacteria like e-coli and Candida yeast and stimulates beneficial flora like lactobacillus and bifidobacteria. Healthy flora is the foundation of good health and it increases absorption of nutrients from the foods we eat, and helps protect against infection. Spirulina builds healthy lactobacillus, aiding assimilation and elimination and relieving constipation.

In 1994, a Russian Patent was awarded for spirulina as a medical food to reduce allergic reactions from radiation sickness. 270 Children of Chernobyl consuming 5 grams a day for 45 days, lowered radionucleides by 50%, and normalized allergic sensitivities. Today we are subject to an onslaught of toxic chemicals in our air, water, food and drugs. Our bodies need to continually eliminate these accumulated toxins. Spirulina has a completely unique combination of phytonutrients - including chlorophyll, phycocyanin and polysaccharides, that can help cleanse our bodies.

Uses: AIDS/HIV, arthritis, athletic nutrition, enhancing natural cleansing and detoxification, supporting cardiovascular function and healthy cholesterol, strengthening the immune system, improving gastrointestinal and digestive health, reducing cancer risks with antioxidant protection, general and long term health.

Precautions and Contraindications

While it has a very high nutritional value, spirulina may also cause some side effects. Some individuals may suffer from allergic reactions to this algae, including rashes, hives, and difficulty breathing. Some commercial versions of spirulina supplements may have also been contaminated with toxic substances during production. It is therefore absolutely critical to buy spirulina only from reputable sources.

People with the rare metabolic condition phenylketonuria (PKU) are not able to metabolize the amino acid phenylalanine, and therefore should avoid taking spirulina. Likewise, people with autoimmune diseases such as rheumatoid arthritis, multiple sclerosis, or lupus should not take spirulina, as it could stimulate the immune system and worsen the condition. Spirulina may also counteract the effectiveness of certain medicines, such as prednisone, which are commonly used for treating asthma and other inflammatory diseases.

While spirulina may appear safe at large doses, healthy adults should seek a doctor’s advice for the right dosage. Children and pregnant or nursing women should also consult a doctor before taking spirulina.


CHLORELLA

Chlorella is a fresh water, single-celled algae that grows in fresh water. Chlorella emerged over 2 billion years ago, and was the first form of a plant with a well-defined nucleus. Because Chlorella is a microscopic organism, it was not discovered until the late 19th century, deriving its name from the Greek, "chloros" meaning green and "ella" meaning small. In fact that chlorella contains the highest amount of chlorophyll of any known plant.

It is thought to boost the immune system and help fight infection. It has been shown to increase the good bacteria in the gastrointestinal (GI) tract, which helps to treat ulcers, colitis, diverticulosis and Crohn's disease. It is also used to treat constipation, fibromyalgia, high blood pressure and high cholesterol. Chlorella has been used to treat cancer and also help protect the body from the effects of cancer radiation treatment.

The algae, which is a popular food supplement in Asia and has been used as energy-producing food for centuries, is often used to prevent or curb the spread of cancer, enhance immunity, promote a good balance of bacteria in the gut, and lower blood cholesterol. In Japan, it is traditionally used as a treatment for duodenal ulcers, gastritis, hypertension, diabetes, hypoglycemia, asthma, and constipation. More recently, it is has been touted as an effective therapy for elevated cholesterol levels, a prophylactic to ward of infections and, and adjunct treatment for cancer.

Chlorella is now used as an adjunct supplement during radiation treatment for cancer. Its abundance of chlorophyll is known to protect the body against ultraviolet radiation.

Coconut Oil

While coconut possesses many health benefits due to its fiber and nutritional content, it's the oil that makes it a truly remarkable food and medicine.

Once mistakenly believed to be unhealthy because of its high saturated fat content, it is now known that the fat in coconut oil is a unique and different from most all other fats and possesses many health giving properties. It is now gaining long overdue recognition as a nutritious health food.

Coconut oil has been described as "the healthiest oil on earth." That's quite a remarkable statement. What makes coconut oil so good? What makes it different from all other oils, especially other saturated fats?

The difference is in the fat molecule. All fats and oils are composed of molecules called fatty acids. There are two methods of classifying fatty acids. The first you are probably familiar with, is based on saturation. You have saturated fats, monounsaturated fats, and polyunsaturated fats. Another system of classification is based on molecular size or length of the carbon chain within each fatty acid. Fatty acids consist of long chains of carbon atoms with hydrogen atoms attached. In this system you have short-chain fatty acids (SCFA), medium-chain fatty acids (MCFA), and long-chain fatty acids (LCFA). Coconut oil is composed predominately of medium-chain fatty acids (MCFA), also known as medium-chain triglycerides (MCT).

The vast majority of fats and oils in our diets, whether they are saturated or unsaturated or come from animals or plants, are composed of long-chain fatty acids (LCFA). Some 98 to 100% of all the fatty acids you consume are LCFA.

The size of the fatty acid is extremely important. Why? Because our bodies respond to and metabolize each fatty acid differently depending on its size. So the physiological effects of MCFA in coconut oil are distinctly different from those of LCFA more commonly found in our foods. The saturated fatty acids in coconut oil are predominately medium-chain fatty acids. Both the saturated and unsaturated fat found in meat, milk, eggs, and plants (including most all vegetable oils) are composed of LCFA.

MCFA are very different from LCFA. They do not have a negative effect on cholesterol and help to protect against heart disease. MCFA help to lower the risk of both atherosclerosis and heart disease. It is primarily due to the MCFA in coconut oil that makes it so special and so beneficial.

There are only a very few good dietary sources of MCFA. By far the best sources are from coconut and palm kernel oils.

3. What is the difference between VIRGIN & COPRA?

If you buy regular coconut oil, chances are it came from dried copra. This usually sits in a warehouse and gets oiled after a few months. This is bleached and deodorized. This is why there is no coconut aroma. High heat is also used which is why this type of oil is yellowish in color.

VIRGIN coconut oil is cold-pressed immediately upon opening of the coconut. The oil is extracted before the fermentation process sets in. It is normally bottled or packed within 8 hours from the time the nut is opened. This is not bleached nor deodorized, maintaining the freshness and the faint sweet coconut scent It will also be clear as water in liquid form because no high heat was used in it’s processing. If heated too much it will have caramelized sugars and have too srtong of a coconut smell and a buttery texture.

Some people still use the old fermentation process, which is expelling the coconut milk then letting the coconut milk sit for 20 to 36 hours to allow the natural fermentation process to separate the oil. This process turns the oil sour and has a short shelf life due to the high moisture content. This home made oil is alright for home use, if the oil will be used immediately. The shelf life of this type of oil is two weeks to a maximum of two months. This type of oil turns rancid in a short period of time because of the high moisture content.
4. What is Organic VIRGIN Coconut Oil?

Organic VIRGIN Coconut oil is Oil produced from a Certified Organic Farm . The process should have also been Certified as Organic. The processing plant is also inspected and certified to have used only food grade equipment, usually only stainless steel. That the processing is natural with no chemical preservatives or additives.

All Philippines coconut trees used to be ORGANIC. Today however, we are SAD to SAY that the Philippines Coconut Authority has started promoting the use of fertilizer on the coconut trees to improve the yield of nuts from the coconut trees.

If you are buying ORGANIC, ask for the Organic Certification.

If you are purchasing VIRGIN COCONUT OIL then the VCO must be clear as water and have a sweet coconut scent. If is not clear as water and does not have a mild coconut aroma then you know it is not VIRGIN COCONUT OIL.

Fermented Coconut Oil will have a Sour and Rancid smell. Some producers will also try to filter their fermented VCO in charcoal to try to remove the sour smell but instead that process gives the VCO a burnt smell and taste.

So, do a smell and taste test.

Not all Virgin coconut Oil are alike. Just like not all Coconuts are Organic.

Coconut oil is one of the most stable oils and is highly resistant to rancidity (It is the unsaturated fats in the common seed oils that are easily oxidized and susceptible to rancidity).
